Sylvester didn’t love the original Ophelia but he did like her enough to not treat her as completely disposable (she’s a good scapegoat, is beautiful, and is immune to whatever charm he’s got bc of his demon heritage). I doubt he even respected her until this Ophelia showed up.

Sylvester genuinely loved Ophelia in the past and he loves her now. He’s pragmatic as hell, so he was aware of how she felt towards him but he married her, shielded her, and accepted death by her hand because he loved her
He seems happier now because from his perspective his usually hateful, obsessive and antagonist wife is warming up to him and might eventually reciprocate his feelings (previous chapters showed that he gave up hope on that until this recent change). I’m also thinking the stigma attached to him has him still being cautious, but in contrast to the prince, Sylvester loves Ophelia at her worse, and will enable all her bs. If he gets shielded from scrutiny bc she’s a menace, well, that’s an added bonus
(so tl;dr, there’s no version of Ophelia past, present or future that Sylvester wasn’t willing to risk it all for)
